Sun-dried green chilli, known in Urdu as sukhi hari mirch, is green chilli dried in the sun. It keeps for much longer than fresh chillies and gives dishes a savoury, slightly smoky flavour.
How to use sun-dried green chilli
- Whole in salans and curries: add a few pieces to the oil early in cooking so the flavour spreads through the gravy.
- Soaked and ground: soak the chillies in warm water until soft, then grind them into a paste for masalas.
- Crisp garnish: fry a few pieces briefly in hot oil and sprinkle them over dal or raita.

How to store it
Keep the chillies in an airtight jar in a cool, dry place, away from moisture. Use a dry spoon every time so that no water gets in. Vacuum-sealed packs keep well until you open them.
Sun-dried or machine-dried?
Machine-dried chillies can look more uniform, but sun-drying is slower and gives a different flavour. Our chillies are dried in open sun and vacuum sealed the same day, with no preservatives. Read more in sun-dried vs machine-dried.
