How to Use Sun-Dried Green Chilli: 7 Easy Pakistani Kitchen Ideas

Here is how to get the most out of every pack.

Rehydrate or use dry?

Both work — it depends on the dish.

• Use dry in anything that simmers for 10 minutes or more: salan, daal, karahi, haleem. The chilli softens in the gravy on its own.
• Rehydrate for chutneys, raita and stir-fries. Soak in warm water for 10–15 minutes, then pat dry.
• Crush a few dry chillies with your fingers or a mortar for instant chilli flakes on eggs, pizza or fries.

7 ways to cook with sun-dried green chilli

1. Tarka for daal — fry 3–4 whole dried chillies with cumin and garlic in ghee, then pour over the daal.
2. Chicken karahi — add 5–6 chillies with the tomatoes. They release heat slowly and hold their shape.
3. Hari chutney — blend rehydrated chillies with mint, coriander, yoghurt and a pinch of salt.
4. Aloo bhujia — crush 2 chillies over the potatoes in the last minute of cooking.
5. Anda paratha — mix crushed chilli into beaten eggs with onion.
6. Achar shortcut — add rehydrated chillies to mustard oil with fennel, nigella seeds and lemon.
7. Chilli oil — warm oil with crushed dried chillies and garlic; drizzle on noodles or rice.

How hot is it?

Drying concentrates flavour, so one dried chilli is roughly as hot as one and a half fresh ones. Start with fewer and add more.

How to store it
