Sun-Dried vs Machine-Dried: What's the Difference?

· FH Premiums

Most dried fruit and vegetables sold in Pakistan are dried in industrial ovens. It is fast and cheap. Sun drying is the older method — slower, weather-dependent, and it gives a noticeably different result.

How each method works

  • Machine drying blows hot air (often 60–70°C) over the produce for several hours.
  • Sun drying spreads produce on raised racks in open sun for several days, turning it by hand.

What changes in the final product

Flavour. High, fast heat can flatten aroma. Slow drying keeps more of the natural taste — the reason a sun-dried chilli smells sharp the moment you open the pack.

Colour. Oven-dried produce is often treated with sulphur to keep bright colours. Sun-dried produce without sulphur is slightly darker and more natural-looking. Darker is not worse.

Texture. Sun-dried fruit tends to be chewier; machine-dried fruit is often crisper or, if sugar was added, sticky.

Read the label

Whichever you buy, check the ingredients:

  • Sugar or syrup — many “dried mango” products are candied. Real dried fruit needs nothing added.
  • Sulphur dioxide / E220 — a preservative used to keep colour.
  • Colour additives — bright unnatural reds and oranges are a warning sign.

The best label has one ingredient: the fruit or vegetable itself.

Why we sun-dry

We are a small family business in Punjab. We dry in open sun, on clean raised racks, and vacuum seal the same day. Nothing added — no sugar, no sulphur, no preservatives.
