Crispy sev, gathiya and peanuts coated in fresh-ground peri peri.
Our nimko base — fine sev, gathiya, split dal, crunchy chana and roasted peanuts — tossed in a fresh-ground peri peri blend while it is still warm from the karahi.
Why flavoured, not traditional. Plain namkeen is everywhere and it all tastes the same. We built a small flavour range instead: peri peri, tikka and cheese. This is the hot one — bird's eye chilli, smoked paprika, garlic and lemon.
Coated, not dusted. Spice applied to warm sev bonds to the surface. Cheap flavoured namkeen is dusted cold, which is why the masala ends up at the bottom of the packet instead of on the food.
Fried clean. The oil is changed every batch. Old oil is what makes cheap nimko taste heavy and bitter at the back of the throat.
Good for. Chai, cricket, unexpected guests, and anyone in the house who puts chilli sauce on everything.
Storage. Six months sealed in a cool dry place. Once opened, press the seal shut properly and finish within four weeks — nimko goes soft long before it goes off.
